Why we love Greek cuisine: History, flavour, and hospitality

This week at Café21, we have created a special Greek-themed menu inspired by the rich culture and traditional flavours of Greece. From May 17th–23rd, customers will be able to enjoy a variety of authentic Mediterranean dishes while relaxing in our garden atmosphere. In this piece, I will be talking about the history and cultural significance behind each dish on the menu, exploring how Greek cuisine has been shaped through generations of tradition. Throughout this process, Café21 is also supporting local businesses by sourcing fresh ingredients from local suppliers where possible, helping to reduce “green miles” and promote sustainability within the community
Chicken Gyros
Gyros is one of the most famous street foods originating from Greece. The word “gyros” means “turn” in Greek, referring to the rotating vertical spit used to cook the meat. Although gyros is strongly associated with modern Greek cuisine, its cooking methods date back to the eastern Mediterranean and the Middle East.
Gyros became a staple food in Greece because it was affordable, filling, and easy to eat on the go. Today, gyro shops can be found throughout Greece, from busy Athens neighbourhoods to small island towns.
Pan-Fried Halloumi Gyros
Halloumi is believed to date back to the medieval Byzantine period, with records of the cheese appearing as early as the 16th century in Cyprus. Traditionally made by rural farming communities, it was created as a way to preserve milk in the warm Mediterranean climate long before refrigeration existed. Although halloumi does not originate from Greece, Greek and Cypriot cuisines share deep cultural and culinary connections, which is why halloumi has become such a loved ingredient in Greek-style cooking today.
Our Pan-Fried Halloumi Gyros brings those Mediterranean flavours together perfectly — crispy golden halloumi wrapped in warm pita bread and served with fresh red onion, cucumber salad, creamy tzatziki, and fries. Could it get any better than that?
Lamb moussaka
Lamb moussaka is one of the most iconic dishes in Greece, loved for its rich flavours and comforting layers. Although versions of moussaka can be found across the Middle East and the Balkans, the modern Greek-style moussaka became popular in the early 20th century thanks to Greek chef Nikolaos Tselementes, who introduced the creamy béchamel topping that is now recognised worldwide.
Traditionally made with layers of aubergine, seasoned lamb mince, tomato sauce, and velvety béchamel, moussaka brings together classic Mediterranean ingredients in one hearty dish. At Cafe21, our lamb moussaka is packed with rich, slow-cooked flavour and served with all the warmth and comfort of a true Greek classic to be enjoyed in Colchester!
